Coconut pumpkin cookies

I'm on a pumpkin kick at the moment, specially when I make my pumpkin topping, 

Pumpkin Dip:


  • Can of pumpkin 
  • salt 
  • sugar/stevia (1-2 tsp)
  • cinnamon 
  • tiny amount of vanilla soya milk 
Mix all these ingredients together.....and hey presto....u have a sweet, delicious, healthy pumpkin dip!  


Ok so this dip helped me make these breakfast babies....Coconut Pumpkin Cookies! 

Recipe: 

dry ingredients:
  • 3/4 cup coconut flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
wet ingredients:
  • 150g pumpkin (canned or dip as made above)
  • 1 tablespoon honey 
  • 1 tablespoon coconut oil 
  • 1/4 teaspoon vanilla extract 
  • 1 tsp caramel flavour
  • 1 cup almond milk


.Breakfast. 

Coconut Pumpkin Cookie with a little strawberry jam & peanut butter, grapes, pumpkin dip and caramelised apple Green tea
